As their health benefits are recognized more and more, plant-based milk alternatives are becoming increasingly popular. However, the use of dairy milk still overwhelms the use of alternatives in every part of the globe, and the demand for dairy products continues to grow. In addition, dairy farming makes up a significant part of the world economy.

At the same time, we are racing toward climate change and irrevocable environmental damage. The production of meat and dairy includes the release of methane and other gases that contribute to global warming, the poisoning of water with fertilizers and other contaminants, deforestation, and damage to the ecological systems of wetlands and prairies.
